This Pinot’s been treated to wild yeast fermentation with 20% whole bunches in the mix for extra depth and length. After a gentle press, it’s taken a nap in French oak for 11 months to mature and reach peak balance.

This is a classic Pinot Noir - packing a ripe, spicy, dark cherry scent and lush fresh berry flavours. It’s drinking beautifully now in its youth, but if you can be patient, it will smooth out and its berryness will darken over the next few years.

Diamond Bay Pinot Noir 2021
- Kevin’s ‘winemaker fantasy’ wine was voted for by the Angels. It’s a superb example of a single block Pinot Noir from a site he planted in 1997. The vineyard is managed organically and the grapes destemmed by a machine bought with the help of the Angels!
- With only 2,100 bottles produced - each one numbered - this elegant red is a rare and beautiful thing. Painstaking attention to detail has been taken from the vineyard to the bottle, including a year in high quality French oak and no fining or filtration to preserve the character of the wine.
- Pure hedonism, bottled! Red berry, spice and violets with a background of subtle oak tell you this is a heady, fragrant Pinot Noir from a great vintage. Will happily stand up to others costing $50-$100. Drink from a burgundy glass for the ultimate experience.

- Picked at the perfect moment in a perfect vintage and matured in freshly toasted barrels made in South Australia from fine French oak. That freshness really makes a difference!
- Savoury and brooding with fine tannins and loaded with dark cherries, cloves and cinnamon. Mouth-watering to the last drop with a lengthy finish. If you have discipline, put a few bottles down to age and enjoy it well into the future.

The cool climate where Bill & Claudia have sourced these grapes from are perfectly suited to the whims of Pinot Noir, probably the most fickle of the leading varietals.

Dayne & Marc’s Rosé is made from 100% Pinot Noir grapes. Sharing the same beginnings as their red, it’s made by the Saigneé technique - taking a portion of Pinot Noir juice from the main fermentation tank after one day so it retains just a very light pale red colour.
