"Christmas morning. What better way to put a full stop on the work year than by waking up and popping a bottle of Jean Phillipe Moulin Vintage 2015 Champagne? (Last year was the 2014, looking forward to the 2015 this year.) Such great value for vintage Champagne. Please don’t judge me, but we are typically up and prepping Christmas Day lunch at about 9 am, so we have this wine, with something to line the stomach for the day ahead… usually smoked salmon on pita with capers scattered over the top.
Then, after the lamb is put in the oven (very low) we’ll open a bottle of Seventh Dimension Barossa Shiraz, grab a quick power nap while the lamb cooks and the wine gets a bit of air into it. If there’s a group coming after a late lunch, we usually have a cheeky little G+T from Bent Road Distillery to refresh and set us up for the evening ahead.
Then it might be eating leftovers (they always seem to taste better later…) with a bottle of The Kick Barossa Shiraz.”

How long can you keep wine once it’s open?
Top tips for storing wine once it’s open.
First, keep it in a cool, dark place.
White or rose should survive in the fridge for two or even three days after it’s been opened. Red wine can last three to five days and yes, you can even put it in the fridge too. Just allow it to warm up to room temp again in the glass before sipping.
Air on wine is great when you’re trying to get it to open up flavours. But when it comes to storing wine, oxygen isn’t your friend.
You’ll want to seal up your wine nice and air tight to keep it as fresh as possible.
Sparkling can cope for a couple of days if you have a proper stopper on it… but don’t believe that old chesnut that a spoon in the neck keeps the fizz. Sorry, it doesn’t.
You’ll know the wine has reached its breaking point if it gets a slight vinegary flavour or has an odd smell.
Can you put wine in the freezer?
Many of us have been guilty of popping a bottle in the freezer to chill more… and then forgetting about it and having it explode! Devastating.
But it actually won’t do your wine any harm - as long as you set a timer to remind yourself it’s there, and avoid a wine slushie.
It takes about 22mins for a wine to fully chill down. Or try this hack - wrap it in a wet cloth before you put it in and it will chill in about half the time.
The fastest way to chill wine
The ultimate way to chill your wine is to fill a cooler (your wine cooler free with every Deluxe case is perfect) with half ice, half cold water and submerge your bottle. Crush the ice if you can and add lots of salt to help it melt. Salt water cools faster than normal water.

“My go-to wine on Christmas day is my R.Paulazzo Reserve Hilltops Shiraz. There’s no more quintessential Aussie wine. It is a medium-bodied, elegant style and it pairs perfectly with Christmas ham.
Pop it in the fridge for 20-30min prior to serving (just to knock it down a touch to around 15 degrees) and it’s the perfect red for a summer Christmas!

Delicious Chrissy cheese
Gooey air fried camembert and white wine? We’re in! This is the best way to fancy up festive nibbles.
-1 wheel baked brie or camembert
-2 tbsp blueberry jam
-1 1/2 tbsp white wine (we used chardonnay)
-1 tbsp chopped walnuts
-1 tsp fresh thyme
-baguette, for serving
-blackberries & blueberries, for serving
1. Add a wheel of brie or camembert to a round oven safe dish.
2. In a small bowl mix jam, wine, and half the thyme.
3. Top cheese with jam mixture.
4. Air fry at 325 degrees for 9 minutes.
5. Serve on a platter with bread and berries.
6. Top cheese with chopped walnuts and remaining thyme. Enjoy alongside the rest of the white wine!
