About the wine
Sensational sticky and sweet treat!

Fact: Winemaker Sam Plunkett had a lot of fun making this very special release. The wine itself is quite tricky to make, with careful handling and nurturing needed throughout the whole process. But the end result? Completely worth it. The grapes for this Late Harvest Viognier are left on the vine until they start to shrivel into raisins, which means Sam and his team have to squeeze them gently and slowly to extract the precious, honey-like nectar. “The juice is so high in sugar that the tool (a refractometer) I normally use to read sugar shows ‘off the scale’!” reveals Sam.

It’s made for sipping and that’s not just because it’s so challenging to craft. Sam explains the high sugar content at the outset means “a bit of warming and cuddling is needed to get the winemaking [fermenting] process underway.” When the wine has the perfect balance of alcohol content, that process is stopped and it’s tucked into French oak barrels for around 11 months, before being bottled.

The sweet result is pale gold in colour, with a beautiful scent of sweet spices and summer fruits, including apricots. It’s seriously and delectably sweet, but has a beautiful balance with lemony acid and talcy tannins thanks to its barreling time. Wonderful apricot and marmalade flavours make this extra tasty, especially when it’s served very chilled. With a great length of flavour, this is a wonderful treat at the end of an evening!
Best before
A delicious wine to drink now with its apricot and marmalade flavours, but it will likely age for a decade or more and become increasingly golden complex and honeyed.
Serving advice
I think very sweet wines are best served super chilled.
Food match
My wife Bron is a great cook and sometimes will put peaches on the barbecue. It's an Ottolenghi recipe with scented yogurt, and delicious with the Halo sticky wine!

Meet the winemaker - Sam Plunkett
- Winemaking legend Sam sources grapes from the family vineyard in the Strathbogie ranges of Central Victoria. Winemakers don't come much more in love with their job than him - he'd "happily spend everyday around tanks, barrels, stainless steel toys and wine".
He’s had a meteoric rise from self-taught winemaker to a multi award-winner and even has his own cellar door now! His winery was recently recognised as one of the Top 10 Dark Horse wineries in James Halliday's 2021 Awards.
