Best before
The wine can age for six to twelve years if cellared properly without temperature fluctuations. Simply buy six or twelve bottles and drink a bottle each year.
Serving advice
Always make time to decant the wine, if you donÂ’t have a decanter, pour out a glass and put the cap back on and give the bottle a vigour is shake, take the cap off and let the wine sit for a couple of minutes. The air will open up the wine.
Food match
For conversation, three different cheeses, a cold Adelaide Hills Goats Curd has great acid, a creamy Brie will coat the mouth and a truffle infused Spanish manchego will bring out the earthy notes of the wine.
