About the wine
Sensational Tassie cool-climate Pinot
Andrew and Jenny Sinclair’s Tassie Pinot Noir is grown on the rich soils of an ancient volcanic range with the vineyard tempered by powerful sea breezes. A long, cool growing season allowed the rich flavours in this fruity red to develop brilliantly!
Discover spicy fruit characters that are unique to the vineyard, complemented by hints of rosemary and musk from the time spent ageing in premium French oak.

Best before
This Pinot Noir is crafted to be enjoyed upon release, yet it also has excellent ageing potential. Over the next 5-7 years, the wine will continue to evolve, with its tannins softening and secondary flavors of truffle, dried fruits, and savory notes emerging. To fully appreciate its development, consider cellaring a few bottles and savoring them at different stages of maturity.
Serving advice
To fully experience the nuances of this wine we recommend decanting the wine for about 30 minutes before serving. This allows the aromas and flavours to open up and express their full complexity. Serve slightly below room temperature, around 16-18°C, to enhance its vibrant fruit character and balanced acidity. Of course, we always recommend opening with friends!

Locally, we love pairing this with a Tasmanian classic: slow-roasted lamb shoulder with rosemary and garlic. The wine's bright acidity and red fruit flavours beautifully complement the richness of the lamb, while its earthy undertones enhance the savoury herbs. Alternatively, it pairs wonderfully with grilled salmon or a mushroom risotto, offering versatility and a delightful dining experience.

Perched on the rich soils of an ancient volcanic range and tempered by powerful sea breezes, the vineyard’s long slow ripening period produces wines that are incredibly fruit-driven with an abundant intensity of flavours. Absolutely delicious!
