About the wine
Limited-release, stunning single vineyard Cabernet Sauvignon

Winemaker Rob Paulazzo couldn’t be more excited about the quality of this vintage’s Cabernet Sauvignon grapes. “The Hilltops is one of Australia’s best regions for cool climate Cabernet,” he shares. “I am extremely fortunate to have access to one of the most outstanding Cabernet vineyards in the region.” Located on the Great Dividing Range in Southern NSW, it has the perfect combination of warm days and cool nights, an ideal mix for premium Cabernet Sauvignon. Previous vintages have received awards for its premium quality - and this year’s strictly limited release looks set to follow in their footsteps.

All fruit was hand harvested at the peak moment, after a flawless growing season. The single vineyard Rob sourced from produced grapes full of flavour, with a stunning, deep colour. ”The quality delivered to the winery was pristine,” he says. “Classic structure, intensity, concentration, power, elegance… they have it all.” Rob declares Cabernet the “true King of grapes”, making this superb wine fit for royalty (aka you!)

It has intense aromas of blackberry and red currant, complemented by hints of black olive and toasty oak, with just the slightest nudge of mint. In the mouth, it is medium bodied, with lovely, welcome intensity. You’ll taste juicy black fruits, dark chocolate and silky cassis, which add an excellent complexity. This is a classically structured wine, with perfect amounts of oak, and fine, long tannins. But it won’t last long - we don’t have huge amounts of this special wine, so don’t miss your chance to enjoy it!

Meet the winemaker - Rob Paulazzo
- Having worked for McWilliams, Orlando and Giesen, Rob has bucket-loads of experience and is excited to use this knowledge to make wines under his very own label. What's more, his winery has achieved rock star status from top wine critics.
- Each drop he creates draws on incredible international experience... he's been everywhere a winemaker could want to work - Burgundy, Tuscany, Napa Valley, Niagara Peninsula and even magical Marlborough.
- Born and bred in the NSW Riverina region, and nominated for young winemaker of the year in 2008, Rob's got access to some seriously amazing fruit. And he's thrilled to be making wines exclusively for Angels!
